Rosemary and Tony Melli are two Americans who grow up in Brooklyn, the aromas and tastes of their Italian grandmothers cooking. They meet and fall in love in the kitchen where food becomes their passion. Years later, they follow their Italian noses back to Italy to find the very best tastes of their grandparents homeland. Olio Di Melli Balsamic Vinegars are a perfect balance of intensely sweet and acidic. They are aged first in oak barrels and then depending on the age of the balsamic are transferred to Cherry wood and a variety of flavored wood barrels for various lengths of time, to achieve a complexity of flavors.
Their three year old balsamic is the Bordeaux Label and is perfect vinegar for salads. The grapes used by the producers are the Trebiano, Lambrusco, and San Giovese grapes. Perfectly ripened grapes are boiled down to a must, in a cauldron over an open fire. The grape must is then placed in an oak wood barrel where it ages for 3 years. The balance of acid with pure, clean sweetness blends wonderfully with a variety of lettuces and slightly steamed fresh vegetables.
